  1. Oven-baked black garlic bun with flavored butter and salted egg

Wine : Bubble Brut:  J. Charpentier “Brut Reserve”, Champagne

 2.    Oysters with lemongrass vinaigrette, cherry pearl, green yum granita

 3.    Pork and kimchi dumpling with black Chinese vinegar and sesame oil

Wine : White Wine:​   2018 Riesling Dreissigacker, Rheinhessen

 

 4.     Lobster salad with tom yum bisque dressing, caviar, compressed cucumber, corn, grilled pineapple, onion

 5. Squid and langoustine wonton consommé soup with white radish, shiitake mushroom and flavor oil

Wine : 2021 Colombelle Sélection Rosé, Plaimont, Côtes de Gascogne IGP

6. Sourdough Bao with duck confit, pickled cucumber, spring onion, coriander and hoisin sauce

7. Rare grilled beef with foie gras , 5 spices potato pure, burnt leeks, mustard seeds pickled and black garlic & soy butter sauce

Wine : 2021 Primitivo 4 Conti, Agricola Leverano, Puglia IGT

8. Coconut kahlua ice cream with caramel and pumpkin ginger tuille
